« Pissaladière and socca from Nice »

When you walk in the streets of Nice especially in the “Vieux Nice” the old town, you can easily eat some local genuine food, one piece of “pissaladière” or a portion of “socca”.

The “pissaladière” is a kind of pizza without tomatoes and with onions instead :) You need a bread dough and onions which are cooked during a long time, they are caramelized and must begin to “compoter” or become nearly stewed :) upon them you put some olives and anchovies. The “pissalat” was a paste of anchovy which is not used anymore.

             

The socca is a very big and fine “galette” a thin pancake with flour of chickpea cooked on a big copper round plate in a pizza oven. When you buy a portion, it is put in a paper, which becomes very oily :) and it’s just delicious !
